Silky steamed egg custard
Jidan geng is a silky steamed Chinese egg custard, made especially smooth by straining.
Drizzled with soy sauce and sesame oil, it is a tender, comforting dish for the whole family.

- Lukewarm water300 ml
- Soy sauce1 tbsp
- Sesame oil1 tsp
- Spring onion1
- Salt1 pinch

Preparation
Whisk the eggs with salt.
Add lukewarm water in proportion.
Strain into a bowl and skim off foam.
Steam gently covered until set.
Drizzle with soy sauce, sesame oil and spring onion.
