Stuffed chive and egg pockets
Jiucai hezi are northern Chinese pan-fried pockets filled with Chinese chives and scrambled egg.
The crisp fried wrapper and juicy filling make them a popular snack and side dish.

- Wheat flour300 g
- Chinese chives300 g
- Eggs3 pieces
- Glass noodles50 g
- Sesame oil & soy saucesome of each
- Ginger & saltsome of each

Preparation
Knead flour with hot water into a dough and rest.
Scramble the eggs and soak the glass noodles.
Mix chives, egg and glass noodles into a filling.
Roll dough into discs, fill and form half-moons.
Pan-fry crisp on both sides.
