Kacchi Biryani

Dhaka's layered mutton biryani

Kacchi biryani is Dhaka's pride: raw, yoghurt-marinated mutton is layered with parboiled rice and cooked together in a sealed pot.

This dum method lets meat and rice cook in their own steam, so the flavours soak deeply into each other.

Ingredients

  • Mutton1 kg
  • Basmati rice600 g
  • Yoghurt300 g
  • Fried onions2 cups
  • Saffron & kewra watersome of each
  • Biryani spices & gheesome of each

Preparation

  1. Marinate the mutton in yoghurt and spices.

  2. Parboil the rice in spiced water.

  3. Lay marinated meat in the pot, layer rice on top.

  4. Drizzle with saffron, kewra, fried onions and ghee.

  5. Seal the pot and cook gently on dum.
