Fried pastries with lentil filling

Kachori are fried, round pastries from North India with a spiced filling of ground lentils or peas.

Baked crisp and blistered, they are a popular snack served with tamarind chutney.

  • Wheat flour250 g
  • Mung or urad dal150 g
  • Fennel & cuminsome of each
  • Ginger & chilisome of each
  • Asafoetida & garam masalasome of each
  • Oil for fryingplenty

Preparation

  1. Soak the dal, grind coarsely and fry with spices.

  2. Knead a firm dough from flour and oil.

  3. Fill dough discs with the lentil filling.

  4. Carefully press flat and seal.

  5. Fry slowly crisp over medium heat.
