Kachori
Fried pastries with lentil filling
Kachori are fried, round pastries from North India with a spiced filling of ground lentils or peas.
Baked crisp and blistered, they are a popular snack served with tamarind chutney.

- Wheat flour250 g
- Mung or urad dal150 g
- Fennel & cuminsome of each
- Ginger & chilisome of each
- Asafoetida & garam masalasome of each
- Oil for fryingplenty

Preparation
Soak the dal, grind coarsely and fry with spices.
Knead a firm dough from flour and oil.
Fill dough discs with the lentil filling.
Carefully press flat and seal.
Fry slowly crisp over medium heat.
