Kadhi Pakora

Yogurt curry with chickpea fritters

Kadhi pakora is a North Indian curry of sour yogurt and chickpea flour in which small fritters float.

A tempering of cumin and curry leaves in hot ghee rounds off the tangy, creamy dish.

Ingredients

  • Yogurt400 g
  • Chickpea flour (besan)120 g
  • Turmeric & chili powdersome of each
  • Cumin & curry leavessome of each
  • Onion for the fritters1
  • Ghee & oilsome of each

Preparation

  1. Whisk yogurt smooth with chickpea flour and water.

  2. Season with turmeric and simmer gently.

  3. Fry fritters of besan and onion.

  4. Add the fritters to the sauce.

  5. Finish with a ghee tempering of cumin.
