Indian cashew diamonds

Kaju katli are fine, diamond-shaped sweets of cashew flour and sugar, a festive classic at Diwali.

The wafer-thin pieces are often decorated with edible silver leaf and are loved across India as a refined mithai.

Ingredients

  • Cashews250 g
  • Sugar150 g
  • Water80 ml
  • Cardamom1 pinch
  • Ghee1 tsp
  • Edible silver leaf (optional)some

Preparation

  1. Grind the cashews into a fine flour.

  2. Cook a syrup from sugar and water.

  3. Stir in cashew flour and cardamom until a dough forms.

  4. Turn the dough onto an oiled surface and roll thin.

  5. Cool, cut into diamonds, decorate with silver leaf.
