Indian cashew diamonds
Kaju katli are fine, diamond-shaped sweets of cashew flour and sugar, a festive classic at Diwali.
The wafer-thin pieces are often decorated with edible silver leaf and are loved across India as a refined mithai.

- Cashews250 g
- Sugar150 g
- Water80 ml
- Cardamom1 pinch
- Ghee1 tsp
- Edible silver leaf (optional)some

Preparation
Grind the cashews into a fine flour.
Cook a syrup from sugar and water.
Stir in cashew flour and cardamom until a dough forms.
Turn the dough onto an oiled surface and roll thin.
Cool, cut into diamonds, decorate with silver leaf.
