Sundanese raw vegetable salad with peanut sauce

Karedok is a raw vegetable salad from West Java that embodies the Sundanese love of raw vegetables.

Crunchy raw beans, cucumber, cabbage and sprouts are coated in a spicy peanut sauce with kencur.

Ingredients

  • Raw mixed vegetables400 g
  • Peanuts120 g
  • Bird's eye chili4 pieces
  • Kencur (sand ginger)1 piece
  • Palm sugar & tamarindsome of each
  • Garlic & limesome of each

Preparation

  1. Roast and grind the peanuts.

  2. Pound with chili, garlic and kencur into a paste.

  3. Stir in palm sugar, tamarind and water.

  4. Cut the raw vegetables bite-size.

  5. Toss with the peanut sauce and serve at once.
