Sundanese raw vegetable salad with peanut sauce
Karedok is a raw vegetable salad from West Java that embodies the Sundanese love of raw vegetables.
Crunchy raw beans, cucumber, cabbage and sprouts are coated in a spicy peanut sauce with kencur.

Ingredients
- Raw mixed vegetables400 g
- Peanuts120 g
- Bird's eye chili4 pieces
- Kencur (sand ginger)1 piece
- Palm sugar & tamarindsome of each
- Garlic & limesome of each

Preparation
Roast and grind the peanuts.
Pound with chili, garlic and kencur into a paste.
Stir in palm sugar, tamarind and water.
Cut the raw vegetables bite-size.
Toss with the peanut sauce and serve at once.
