Betawi omelette with sticky rice and coconut

Kerak telor is a specialty of the Betawi people of Jakarta and is regarded as a nostalgic festival food.

Sticky rice and egg are cooked in the pan into a crisp crust and topped with spiced grated coconut.

  • Sticky rice150 g
  • Duck or chicken eggs2
  • Toasted grated coconut (serundeng)4 tbsp
  • Dried shrimp (ebi)2 tbsp
  • Shallots & chilisome of each
  • Salt & sugarsome of each

Preparation

  1. Let the sticky rice pre-soak.

  2. Heat the rice in a pan.

  3. Add egg with spices on top and spread out.

  4. Cook into a crust without flipping.

  5. Top with grated coconut and dried shrimp.
