Betawi omelette with sticky rice and coconut
Kerak telor is a specialty of the Betawi people of Jakarta and is regarded as a nostalgic festival food.
Sticky rice and egg are cooked in the pan into a crisp crust and topped with spiced grated coconut.

- Sticky rice150 g
- Duck or chicken eggs2
- Toasted grated coconut (serundeng)4 tbsp
- Dried shrimp (ebi)2 tbsp
- Shallots & chilisome of each
- Salt & sugarsome of each

Preparation
Let the sticky rice pre-soak.
Heat the rice in a pan.
Add egg with spices on top and spread out.
Cook into a crust without flipping.
Top with grated coconut and dried shrimp.
