Flaky layered bread from South India

Kerala parotta is a flaky, many-layered white flour bread from South India.

The dough is pulled paper-thin, pleated and twisted into a spiral so that many layers form when fried.

Ingredients

  • White flour (maida)400 g
  • Egg1
  • Sugar & saltsome of each
  • Oilplenty
  • Warm wateras needed

Preparation

  1. Knead flour with egg, sugar, salt and water into a supple dough.

  2. Rest long and divide into balls.

  3. Pull each ball paper-thin and oil it.

  4. Pleat and twist into a spiral.

  5. Flatten and fry golden on the griddle.
