Rolled Gujarati chickpea bites

Khandvi are delicate, rolled bites from Gujarat, made from a paste of chickpea flour and yoghurt.

The wafer-thin spread paste is rolled up and finished with a tempering of mustard seeds and curry leaves.

Ingredients

  • Chickpea flour (besan)100 g
  • Yoghurt200 g
  • Turmeric & gingersome of each
  • Mustard seeds & curry leavessome of each
  • Grated coconut & coriandersome of each
  • Oil & saltsome of each

Preparation

  1. Whisk chickpea flour smooth with yoghurt, water and turmeric.

  2. Cook while stirring into a thick paste.

  3. Spread the paste wafer-thin on a smooth surface.

  4. Let set, cut into strips and roll up.

  5. Serve with mustard-seed tempering, coconut and coriander.
