Khandvi
Rolled Gujarati chickpea bites
Khandvi are delicate, rolled bites from Gujarat, made from a paste of chickpea flour and yoghurt.
The wafer-thin spread paste is rolled up and finished with a tempering of mustard seeds and curry leaves.

- Chickpea flour (besan)100 g
- Yoghurt200 g
- Turmeric & gingersome of each
- Mustard seeds & curry leavessome of each
- Grated coconut & coriandersome of each
- Oil & saltsome of each

Preparation
Whisk chickpea flour smooth with yoghurt, water and turmeric.
Cook while stirring into a thick paste.
Spread the paste wafer-thin on a smooth surface.
Let set, cut into strips and roll up.
Serve with mustard-seed tempering, coconut and coriander.
