Thai steamed layered jelly cake

Khanom chan is a traditional Thai sweet of many thin, steamed layers that symbolise good fortune.

Rice and tapioca flour with coconut milk give a chewy, glossy texture; pandan colours the layers green.

Ingredients

  • Rice flour100 g
  • Tapioca flour150 g
  • Coconut milk400 ml
  • Sugar150 g
  • Pandan juicesome
  • Salt1 pinch

Preparation

  1. Whisk flours, coconut milk and sugar into a smooth batter.

  2. Divide the batter and colour one half green with pandan.

  3. Pour a thin layer into the tin and steam.

  4. Add layer after layer alternately and steam.

  5. Let cool completely and cut into diamonds.
