Khanom Mor Gaeng
Thai mung bean custard
Khanom mor gaeng is a baked Thai custard of mung beans, eggs and coconut milk.
Crisp fried shallots on the surface give it a characteristic savoury-sweet accent.

- Cooked mung beans200 g
- Eggs4
- Coconut milk300 ml
- Palm sugar120 g
- Fried shallots3 tbsp
- Pinch of salt1 pinch

Preparation
Puree the mung beans finely with coconut milk.
Stir in eggs and palm sugar.
Pass the mixture through a sieve.
Pour into a dish and bake in the oven.
Top with fried shallots and let cool.
