Thai mung bean custard

Khanom mor gaeng is a baked Thai custard of mung beans, eggs and coconut milk.

Crisp fried shallots on the surface give it a characteristic savoury-sweet accent.

Ingredients

  • Cooked mung beans200 g
  • Eggs4
  • Coconut milk300 ml
  • Palm sugar120 g
  • Fried shallots3 tbsp
  • Pinch of salt1 pinch

Preparation

  1. Puree the mung beans finely with coconut milk.

  2. Stir in eggs and palm sugar.

  3. Pass the mixture through a sieve.

  4. Pour into a dish and bake in the oven.

  5. Top with fried shallots and let cool.
