Steamed cakes from sugar palm fruit

Khanom tan is a fragrant Thai dessert made from the pulp of the sugar palm fruit.

Fermented with rice flour, coconut and yeast, the cakes are steamed in banana leaves and topped with coconut.

Ingredients

  • Sugar palm fruit pulp200 g
  • Rice flour200 g
  • Coconut milk200 ml
  • Sugar120 g
  • Freshly grated coconut100 g
  • Yeast & pinch of saltsome of each

Preparation

  1. Mix the palm fruit pulp with rice flour and coconut milk.

  2. Add sugar and yeast.

  3. Let the batter ferment for several hours.

  4. Fill into banana-leaf cups.

  5. Steam and top with salted coconut.
