Khanom Tuay

Two-layered coconut pudding in cups

Khanom tuay is a Thai dessert of small cups with two layers.

A sweet pandan base below and a salty coconut cream on top, steamed in little moulds.

Ingredients

  • Rice flour100 g
  • Coconut milk300 ml
  • Pandan extract1 tsp
  • Palm sugar60 g
  • Rice flour for the coconut layer1 tbsp
  • Pinch of salt1 pinch

Preparation

  1. Stir a sweet pandan layer from rice flour, sugar and pandan.

  2. Pre-steam the cups and fill with the sweet layer.

  3. Steam briefly until set.

  4. Top with the salty coconut cream.

  5. Finish steaming and let cool.
