Khanom Tuay
Two-layered coconut pudding in cups
Khanom tuay is a Thai dessert of small cups with two layers.
A sweet pandan base below and a salty coconut cream on top, steamed in little moulds.

- Rice flour100 g
- Coconut milk300 ml
- Pandan extract1 tsp
- Palm sugar60 g
- Rice flour for the coconut layer1 tbsp
- Pinch of salt1 pinch

Preparation
Stir a sweet pandan layer from rice flour, sugar and pandan.
Pre-steam the cups and fill with the sweet layer.
Steam briefly until set.
Top with the salty coconut cream.
Finish steaming and let cool.
