Rice fried with shrimp paste

Khao kluk kapi is a Thai rice fried with fermented shrimp paste (kapi), giving it a deeply umami character.

It is served with an array of sides such as sweet pork, omelette strips, green mango and lime to mix yourself.

Ingredients

  • Cooked rice400 g
  • Shrimp paste (kapi)2 tbsp
  • Sweet pork150 g
  • Egg2 pieces
  • Green mango1/2 piece
  • Shallots, chili & limesome of each

Preparation

  1. Fry the shrimp paste in oil until aromatic.

  2. Add the rice and mix evenly through.

  3. Fry an omelette and cut into strips.

  4. Arrange the sides around the plate.

  5. Mix at the table with green mango and lime.
