Khao Pad

Thai fried rice with fish sauce and lime

Khao pad is Thailand's everyday dish for any time of day – quick, filling and endlessly variable. Unlike Chinese fried rice, it gets its seasoning from fish sauce rather than soy sauce.

It is served with a squeeze of lime, fresh cucumber and prik nam pla (chilli in fish sauce) for individual seasoning.

Ingredients

  • Cooked, cold jasmine rice400 g
  • Chicken breast, diced200 g
  • Eggs2
  • Fish sauce2 tbsp
  • Garlic & onion1 each
  • Spring onion & tomato1 handful each
  • Lime & cucumberto serve

Preparation

  1. Fry the garlic in a hot wok, add the chicken and cook through.

  2. Push aside, scramble in the eggs and let them set.

  3. Add the cold rice and stir-fry, tossing.

  4. Season with fish sauce, fold in tomato and spring onion.

  5. Serve with lime and cucumber.
