Khao pad sapparod is a Thai fried rice with pineapple, often served in the hollowed-out fruit.

- Cooked rice (cold)400 g
- Pineapple pieces200 g
- Prawns150 g
- Cashew nuts3 tbsp
- Curry powder & fish saucesome of each
- Egg & spring onionsome of each

Preparation
Set the egg in the wok.
Stir-fry prawns and rice vigorously.
Season with curry powder and fish sauce.
Fold in pineapple and cashews.
Serve in the hollowed-out pineapple.
