Fried rice served in the pineapple

Khao pad sapparod is a Thai fried rice with pineapple, often served in the hollowed-out fruit.

With prawns, cashews and a hint of curry, it blends sweet and savoury flavours.

Ingredients

  • Cooked rice (cold)400 g
  • Pineapple pieces200 g
  • Prawns150 g
  • Cashew nuts3 tbsp
  • Curry powder & fish saucesome of each
  • Egg & spring onionsome of each

Preparation

  1. Set the egg in the wok.

  2. Stir-fry prawns and rice vigorously.

  3. Season with curry powder and fish sauce.

  4. Fold in pineapple and cashews.

  5. Serve in the hollowed-out pineapple.
