Southern Thai rice salad with herbs

Khao yam is a colourful rice salad from southern Thailand, where cooked rice is mixed with many finely cut herbs and vegetables.

A fermented budu fish sauce with lemongrass and lime leaves is drizzled over and everything is tossed at the table.

Ingredients

  • Cooked rice400 g
  • Grated coconut (toasted)60 g
  • Lemongrass & lime leavessome of each
  • Long beans, cucumber & sproutssome of each
  • Budu or fish sauce3 tbsp
  • Lime & pomelosome of each

Preparation

  1. Toast the coconut and finely cut the herbs.

  2. Cook fish sauce with lemongrass into a dressing.

  3. Place the rice in the centre of the plate.

  4. Arrange vegetables, herbs and coconut around it.

  5. Drizzle with dressing and lime and toss.
