Mongolian stew cooked with hot stones

Khorkhog is a Mongolian festive dish in which lamb is cooked together with glowing hot stones in a container.

The stones release their heat from within, making the meat juicy and smoky.

Ingredients

  • Lamb on the bone1.5 kg
  • Smooth river stonesseveral
  • Potatoes & carrots500 g
  • Onions2
  • Salt & peppersome of each
  • Water1 cup

Preparation

  1. Heat the stones glowing hot in a fire.

  2. Layer lamb, vegetables and hot stones.

  3. Season with salt, pepper and a little water.

  4. Seal the container tightly.

  5. Steam tender for about two hours and open carefully.
