Braised burdock root with carrot

Kinpira gobo is a classic Japanese side dish of finely cut burdock root and carrot stir-fried in soy sauce and mirin.

The name refers to a legendary strong figure and stands for the bold, well-seasoned style of preparation.

Ingredients

  • Burdock root (gobo)300 g
  • Carrot1
  • Soy sauce2 tbsp
  • Mirin & sugar1 tbsp each
  • Sesame oil1 tbsp
  • Sesame & chilisome of each

Preparation

  1. Cut gobo and carrot into fine strips.

  2. Soak gobo briefly in water so it does not brown.

  3. Stir-fry vigorously in sesame oil.

  4. Deglaze with soy sauce, mirin and sugar.

  5. Cook down until nearly dry and sprinkle with sesame.
