Sri Lankan milk rice cake
Kiribath is a firm rice cake cooked in coconut milk - in Sri Lanka the traditional festive dish for the New Year and special occasions.
The cooked rice is pressed flat and cut into its characteristic diamonds; it is often served with spicy lunu miris sambol or jaggery.

Ingredients
- Short-grain rice300 g
- Water500 ml
- Thick coconut milk250 ml
- Salt1 tsp
- Lunu miris (chili sambol)to serve

Preparation
Cook the rice soft in water.
Add coconut milk and salt.
Simmer stirring until thick and creamy.
Spread onto a board and press flat.
Cut into diamonds, serve with lunu miris.
