Sri Lankan milk rice cake

Kiribath is a firm rice cake cooked in coconut milk - in Sri Lanka the traditional festive dish for the New Year and special occasions.

The cooked rice is pressed flat and cut into its characteristic diamonds; it is often served with spicy lunu miris sambol or jaggery.

Ingredients

  • Short-grain rice300 g
  • Water500 ml
  • Thick coconut milk250 ml
  • Salt1 tsp
  • Lunu miris (chili sambol)to serve

Preparation

  1. Cook the rice soft in water.

  2. Add coconut milk and salt.

  3. Simmer stirring until thick and creamy.

  4. Spread onto a board and press flat.

  5. Cut into diamonds, serve with lunu miris.
