Banana and sweet potato in coconut palm sugar

Kolak is an Indonesian dessert of banana and sweet potato cooked in coconut milk with palm sugar and pandan.

Especially during the fasting month of Ramadan it is enjoyed warm or chilled to break the fast.

Ingredients

  • Plantains3 pieces
  • Sweet potato300 g
  • Coconut milk400 ml
  • Palm sugar100 g
  • Pandan leaf1 piece
  • Salt1 pinch

Preparation

  1. Dice the sweet potato and pre-cook in water.

  2. Dissolve palm sugar with pandan and a little water.

  3. Add coconut milk and a pinch of salt.

  4. Simmer banana and sweet potato soft in it.

  5. Serve warm or chilled.
