Kongbiji Jjigae

Ground soybean stew

Kongbiji jjigae is a creamy Korean stew of finely ground, soaked soybeans - a nourishing, frugal home dish.

Enriched with kimchi and a little pork, its texture is soft and silky, the flavour nutty and mild.

Ingredients

  • Soybeans (soaked)200 g
  • Ripe kimchi150 g
  • Garlic2 cloves
  • Soy sauce1 tbsp
  • Spring onion1 stalk
  • Sesame oil1 tsp

Preparation

  1. Finely grind the soybeans with a little water.

  2. Briefly fry the kimchi with garlic.

  3. Add the ground soybeans and water.

  4. Simmer silky, stirring.

  5. Season with soy sauce, spring onion and sesame oil.
