Bean sprout soup with rice from Jeonju

Kongnamul gukbap is a clear, savoury bean sprout soup with rice, a specialty of the city of Jeonju.

It is considered a warming breakfast and a popular hangover cure.

Ingredients

  • Soybean sprouts300 g
  • Cooked rice300 g
  • Dried anchovy broth800 ml
  • Gochugaru (chili flakes)1 tbsp
  • Garlic & spring onionsome of each
  • Egg1

Preparation

  1. Bring the anchovy broth to a boil with garlic.

  2. Cook the bean sprouts in it.

  3. Add rice and gochugaru.

  4. Let it come to a brief boil.

  5. Serve with egg and spring onion.
