Grilled pork neck from Isaan

Kor moo yang is grilled pork neck from northeastern Thailand, prized for its tender marbling.

Marinated in soy sauce, garlic and coriander, it is served with a spicy nam jim jaew dip.

  • Pork neck600 g
  • Soy sauce & oyster sauce2 tbsp each
  • Garlic & coriander rootsome of each
  • Toasted rice powder1 tbsp
  • Chili flakes & fish saucesome of each
  • Lime & palm sugarsome of each

Preparation

  1. Marinate the pork neck with soy sauce and garlic.

  2. Let it rest for a few hours.

  3. Grill slowly over the fire.

  4. Stir a dip of fish sauce, lime, chili and rice powder.

  5. Slice the meat and serve with the dip.
