Korean blood and glass-noodle sausage

Sundae is a Korean sausage in which pork intestine is filled with glass noodles, glutinous rice and blood, then steamed.

A popular street and market food, it is served sliced with seasoned salt.

Ingredients

  • Pork intestine1 m
  • Glass noodles (dangmyeon)150 g
  • Pork blood300 ml
  • Glutinous rice100 g
  • Spring onion & garlicsome of each
  • Perilla & saltsome of each

Preparation

  1. Clean and prepare the intestine thoroughly.

  2. Mix glass noodles, rice, blood and seasonings.

  3. Loosely fill the intestine with the mixture.

  4. Tie the ends and steam for about an hour.

  5. Let cool, serve sliced with seasoned salt.
