Kothu Parotta
Chopped layered bread from the Tamil street griddle
Kothu parotta is a Tamil street dish of chopped parotta bread tossed with egg, vegetables and curry.
On a hot griddle, everything is rhythmically chopped and fried to the beat of metal scrapers.

- Parotta bread (day-old)3
- Eggs2
- Onion & green chilisome of each
- Curry sauce or salna150 ml
- Ginger-garlic paste1 tbsp
- Curry leaves & oilsome of each

Preparation
Tear or chop the parotta into strips.
Fry onion, chili and ginger-garlic.
Add the egg and let it set.
Add parotta and curry sauce.
Chop on the griddle and fry through.
