Chopped layered bread from the Tamil street griddle

Kothu parotta is a Tamil street dish of chopped parotta bread tossed with egg, vegetables and curry.

On a hot griddle, everything is rhythmically chopped and fried to the beat of metal scrapers.

  • Parotta bread (day-old)3
  • Eggs2
  • Onion & green chilisome of each
  • Curry sauce or salna150 ml
  • Ginger-garlic paste1 tbsp
  • Curry leaves & oilsome of each

Preparation

  1. Tear or chop the parotta into strips.

  2. Fry onion, chili and ginger-garlic.

  3. Add the egg and let it set.

  4. Add parotta and curry sauce.

  5. Chop on the griddle and fry through.
