Sichuan chicken in chili oil

Kou shui ji, literally mouthwatering chicken, is a cold Sichuan starter.

Poached chicken is served in a sauce of chili oil, Sichuan pepper, garlic and sesame that is spicy, nutty and numbing at once.

Ingredients

  • Chicken legs500 g
  • Chili oil4 tbsp
  • Sichuan pepper1 tsp
  • Garlic & gingersome of each
  • Soy sauce & black vinegarsome of each
  • Sesame & peanutssome of each

Preparation

  1. Poach the chicken with ginger and shock it cold.

  2. Mix chili oil, Sichuan pepper and garlic into a sauce.

  3. Add soy sauce, vinegar and a little sugar.

  4. Cut the chicken into pieces and arrange.

  5. Douse with the sauce, scatter with sesame and peanuts.
