Rolled rice noodles in peppery broth

Kuay jab nam sai is a Bangkok noodle soup with rice noodles rolled into tubes in a clear, white-pepper-spiced broth.

Crispy pork belly, offal and a soft egg make it a savoury, peppery street dish.

Ingredients

  • Wide rice noodles (rolled)250 g
  • Crispy pork belly200 g
  • Pork bones (broth)500 g
  • White pepper1 tbsp
  • Soy sauce & garlicsome of each
  • Eggs3 pieces

Preparation

  1. Boil pork bones into a clear broth.

  2. Season with plenty of white pepper and soy sauce.

  3. Cook the rice noodles in the broth.

  4. Top with crispy pork belly and egg.

  5. Serve scattered with fried garlic.
