Rolled rice noodles in peppery broth
Kuay jab nam sai is a Bangkok noodle soup with rice noodles rolled into tubes in a clear, white-pepper-spiced broth.
Crispy pork belly, offal and a soft egg make it a savoury, peppery street dish.

- Wide rice noodles (rolled)250 g
- Crispy pork belly200 g
- Pork bones (broth)500 g
- White pepper1 tbsp
- Soy sauce & garlicsome of each
- Eggs3 pieces

Preparation
Boil pork bones into a clear broth.
Season with plenty of white pepper and soy sauce.
Cook the rice noodles in the broth.
Top with crispy pork belly and egg.
Serve scattered with fried garlic.
