Many-layered Indonesian spice cake

Kue lapis legit is a rich Indonesian layer cake with Dutch roots, the name meaning many rich layers.

Each thin layer is baked individually under the broiler, which takes great patience.

Ingredients

  • Egg yolks20
  • Butter300 g
  • Sugar200 g
  • Flour120 g
  • Speculoos spice (cinnamon, clove, cardamom)2 tsp
  • Condensed milk2 tbsp

Preparation

  1. Cream the butter and sugar.

  2. Stir in the egg yolks gradually.

  3. Fold in flour and spices.

  4. Pour a thin layer into the tin and bake under the broiler.

  5. Repeat layer by layer until the cake is tall.
