Small Malay sponge cakes

Kuih bahulu are small, airy sponge cakes that belong to Malay festivities such as Hari Raya.

They are baked in decorative metal moulds and resemble Japanese castella.

  • Eggs4
  • Sugar120 g
  • Flour120 g
  • Pinch of salt1 pinch
  • Some oil for the mouldssome

Preparation

  1. Whisk eggs with sugar until very fluffy.

  2. Gently fold in the flour.

  3. Preheat oiled moulds in the oven.

  4. Fill in the batter.

  5. Bake golden and release.
