Little coconut-egg cakes from the special mould

Kuih cara are small Malay cakes baked in a special cast mould with wells.

The batter of egg, coconut milk and pandan yields tender, slightly custardy bites.

  • Eggs2
  • Coconut milk250 ml
  • Flour120 g
  • Sugar80 g
  • Pandan extract1 tsp
  • Pinch of salt1 pinch

Preparation

  1. Whisk the eggs with sugar.

  2. Stir in coconut milk, flour and pandan.

  3. Preheat and grease the kuih cara mould.

  4. Pour the batter into the wells.

  5. Bake until the cakes are set.
