Steamed palm sugar jellies with coconut

Kuih kosui are steamed, wobbly rice flour jellies made in small cups.

Coloured with palm sugar or pandan, they are served rolled in freshly grated coconut.

Ingredients

  • Rice flour150 g
  • Tapioca starch60 g
  • Palm sugar (gula melaka)150 g
  • Freshly grated coconut150 g
  • Alkaline water (lye)a little
  • Pinch of salt1 pinch

Preparation

  1. Dissolve the palm sugar in water.

  2. Stir with rice flour and tapioca starch into a smooth batter.

  3. Fill into small cups.

  4. Steam for about 20 minutes until set.

  5. Let cool and roll in salted coconut.
