Kuih Seri Muka

Two-layer pandan glutinous rice cake

Kuih Seri Muka is a beloved two-layer snack from Malaysia: steamed glutinous rice on the bottom, a green pandan-coconut custard on top.

The name roughly means "pretty face" - the vivid green top comes from the juice of fresh pandan leaves.

Ingredients

  • Glutinous rice300 g
  • Coconut milk300 ml
  • Eggs3 pieces
  • Pandan juice4 tbsp
  • Sugar120 g
  • Flour3 tbsp

Preparation

  1. Steam glutinous rice with coconut milk and press into a tin.

  2. Whisk eggs, sugar, remaining coconut milk, pandan juice and flour.

  3. Pour the custard over the rice layer.

  4. Steam again until the top layer sets.

  5. Cool and cut into squares.
