Sri Lankan chicken curry with dark spices

Kukul mas curry is a quintessential Sri Lankan chicken curry whose depth comes from roasted curry powder.

Pandan leaf, curry leaves and cinnamon give the sauce its unmistakable island aroma.

Ingredients

  • Chicken pieces800 g
  • Roasted curry powder2 tbsp
  • Curry leaves & pandan leafsome of each
  • Coconut milk300 ml
  • Onion & garlicsome of each
  • Cinnamon & chili powdersome of each

Preparation

  1. Marinate the chicken with curry powder and salt.

  2. Fry onions, curry leaves and pandan.

  3. Add the chicken and brown all over.

  4. Deglaze with coconut milk and simmer.

  5. Cook until the meat is tender and the sauce thick.
