Deep-fried skewers from Osaka

Kushikatsu are breaded, deep-fried skewers of meat, vegetables and seafood, a specialty of Osaka's Shinsekai district.

An iron rule of the stalls: never double-dip in the shared dipping sauce.

Ingredients

  • Pork & vegetables500 g
  • Panko150 g
  • Egg & floursome of each
  • Dipping sauce (Worcestershire base)200 ml
  • Wooden skewersas needed
  • Cabbageto serve

Preparation

  1. Cut meat and vegetables bite-size and thread on skewers.

  2. Bread in flour, egg and panko.

  3. Deep-fry golden in hot oil.

  4. Set out the dipping sauce.

  5. Dip the skewers once and serve with raw cabbage.
