Deep-fried skewers from Osaka
Kushikatsu are breaded, deep-fried skewers of meat, vegetables and seafood, a specialty of Osaka's Shinsekai district.
An iron rule of the stalls: never double-dip in the shared dipping sauce.

- Pork & vegetables500 g
- Panko150 g
- Egg & floursome of each
- Dipping sauce (Worcestershire base)200 ml
- Wooden skewersas needed
- Cabbageto serve

Preparation
Cut meat and vegetables bite-size and thread on skewers.
Bread in flour, egg and panko.
Deep-fry golden in hot oil.
Set out the dipping sauce.
Dip the skewers once and serve with raw cabbage.
