Cambodian rice noodle soup for breakfast

Kuy teav is a Cambodian rice noodle soup traditionally eaten for breakfast, with roots in Teochew Chinese cuisine.

A clear pork or bone broth is poured over rice noodles and topped with pork, fried garlic and fresh herbs.

  • Rice noodles300 g
  • Pork bone broth1.5 l
  • Pork (thin)200 g
  • Fried garlic2 tbsp
  • Bean sprouts & spring onionsome of each
  • Lime & herbssome of each

Preparation

  1. Boil pork bones into a clear broth.

  2. Soak and briefly cook the rice noodles.

  3. Put the noodles into bowls.

  4. Pour hot broth with pork over them.

  5. Serve with fried garlic, sprouts and herbs.
