Newari soup of nine sprouted beans

Kwati is a nourishing Newari soup of nine different sprouted legumes, traditionally cooked for the Janai Purnima festival.

The sprouted beans are worked with ginger, garlic and spices into a hearty, wholesome stew.

Ingredients

  • Nine sprouted beans400 g
  • Ginger & garlicsome of each
  • Cumin & turmericsome of each
  • Onion & tomatosome of each
  • Ghee & bay leafsome of each
  • Coriander & saltsome of each

Preparation

  1. Wash the sprouted beans and pre-cook them.

  2. Fry onion, ginger and garlic in ghee.

  3. Add cumin, turmeric and tomato.

  4. Add the beans and simmer soft with water.

  5. Season with coriander and salt, serve with rice.
