Newari soup of nine sprouted beans
Kwati is a nourishing Newari soup of nine different sprouted legumes, traditionally cooked for the Janai Purnima festival.
The sprouted beans are worked with ginger, garlic and spices into a hearty, wholesome stew.

- Nine sprouted beans400 g
- Ginger & garlicsome of each
- Cumin & turmericsome of each
- Onion & tomatosome of each
- Ghee & bay leafsome of each
- Coriander & saltsome of each

Preparation
Wash the sprouted beans and pre-cook them.
Fry onion, ginger and garlic in ghee.
Add cumin, turmeric and tomato.
Add the beans and simmer soft with water.
Season with coriander and salt, serve with rice.
