Uyghur hand-pulled noodles with meat sauce

Laghman are hand-pulled wheat noodles of the Uyghurs in Xinjiang, served with a hearty sauce of meat and vegetables.

The noodles are stretched long by repeated pulling and twisting; the sauce of pepper, tomato and cumin shows Central Asian influences.

Ingredients

  • Wheat flour350 g
  • Beef300 g
  • Pepper & tomatosome of each
  • Onion & garlicsome of each
  • Cumin & chilisome of each
  • Soy sauce & oilsome of each

Preparation

  1. Knead a firm dough, oil it and rest long.

  2. Pull the dough into long strands and cook.

  3. Fry the beef with onion and garlic.

  4. Cook pepper, tomato and spices into a sauce.

  5. Plate the noodles with the meat sauce and serve.
