Rolled rice noodles in fish-coconut sauce from Kelantan

Laksam is a dish from northern Malaysian Kelantan with wide, rolled rice noodles.

They are doused in a creamy sauce of pureed fish and coconut milk.

Ingredients

  • Rice flour200 g
  • White fish400 g
  • Coconut milk400 ml
  • Shallots & lemongrasssome of each
  • Fresh herbs & cucumberto serve
  • Salt & peppersome of each

Preparation

  1. Steam rice flour batter into thin sheets and roll up.

  2. Cook the fish and puree finely.

  3. Simmer with shallots, lemongrass and coconut milk.

  4. Reduce into a creamy sauce.

  5. Serve the noodle rolls with sauce, herbs and cucumber.
