Lao Po Bing
Cantonese wintermelon wife cake
Lao po bing, the wife cake, is a flat Cantonese pastry with a filling of candied wintermelon.
A tender, flaky shell encloses the sweet paste; the cake is a traditional gift and tea pastry.

Ingredients
- Wheat flour250 g
- Candied wintermelon200 g
- Glutinous rice flour50 g
- Lard or butter80 g
- Sugar60 g
- Sesame & eggsome of each

Preparation
Work the wintermelon with sugar and rice flour into a paste.
Make a water dough and a fat dough separately.
Fold both doughs into a flaky shell.
Fill with paste and press flat.
Brush with egg, scatter sesame, bake golden.
