Cantonese wintermelon wife cake

Lao po bing, the wife cake, is a flat Cantonese pastry with a filling of candied wintermelon.

A tender, flaky shell encloses the sweet paste; the cake is a traditional gift and tea pastry.

Ingredients

  • Wheat flour250 g
  • Candied wintermelon200 g
  • Glutinous rice flour50 g
  • Lard or butter80 g
  • Sugar60 g
  • Sesame & eggsome of each

Preparation

  1. Work the wintermelon with sugar and rice flour into a paste.

  2. Make a water dough and a fat dough separately.

  3. Fold both doughs into a flaky shell.

  4. Fill with paste and press flat.

  5. Brush with egg, scatter sesame, bake golden.
