Sticky rice cooked in bamboo

Lemang is a Malay festive dish of sticky rice and coconut milk cooked in banana-leaf-lined bamboo tubes.

Slowly roasted over glowing charcoal, it is a highlight of the festive table especially at Hari Raya.

Ingredients

  • Sticky rice500 g
  • Coconut milk500 ml
  • Banana leavesseveral
  • Bamboo tubes3
  • Salt1 tsp

Preparation

  1. Soak the sticky rice and drain.

  2. Line the bamboo tubes with banana leaves.

  3. Fill in rice and pour over salted coconut milk.

  4. Roast slowly over glowing charcoal.

  5. Let cool and cut into slices.
