South Indian lemon rice with peanuts

Lemon rice, called chitranna in Kannada, is a refreshing South Indian rice with lemon juice and turmeric.

A tempering of mustard seeds, curry leaves and peanuts lends it crunch and aroma.

Ingredients

  • Cooked rice400 g
  • Lemon juice3 tbsp
  • Turmeric1 tsp
  • Mustard seeds & curry leavessome of each
  • Peanuts3 tbsp
  • Green chili & oilsome of each

Preparation

  1. Pop the mustard seeds in oil.

  2. Toast peanuts, curry leaves and chili.

  3. Stir in the turmeric.

  4. Fold in the cooked rice.

  5. Take off the heat and fold in lemon juice.
