Burmese hand-mixed salad
Let thohk literally means hand-mixed and refers to a Burmese salad of several types of noodle and vegetable.
Lime, roasted chickpea flour and fried garlic give it its tangy, savoury character.

Ingredients
- Cooked rice noodles200 g
- Roasted chickpea flour3 tbsp
- Fried garlic & oilsome of each
- Cabbage & carrot200 g
- Lime & fish saucesome of each
- Tamarind water2 tbsp

Preparation
Put noodles and vegetables into a large bowl.
Add chickpea flour, garlic oil and tamarind.
Season with lime and fish sauce.
Mix everything thoroughly by hand.
Serve sprinkled with fried garlic.
