Burmese hand-mixed salad

Let thohk literally means hand-mixed and refers to a Burmese salad of several types of noodle and vegetable.

Lime, roasted chickpea flour and fried garlic give it its tangy, savoury character.

Ingredients

  • Cooked rice noodles200 g
  • Roasted chickpea flour3 tbsp
  • Fried garlic & oilsome of each
  • Cabbage & carrot200 g
  • Lime & fish saucesome of each
  • Tamarind water2 tbsp

Preparation

  1. Put noodles and vegetables into a large bowl.

  2. Add chickpea flour, garlic oil and tamarind.

  3. Season with lime and fish sauce.

  4. Mix everything thoroughly by hand.

  5. Serve sprinkled with fried garlic.
