Cold salad of wood ear mushrooms
Liang ban mu er is a refreshing cold Chinese salad of crunchy black wood ear mushrooms.
Dressed in vinegar, garlic and chili oil, it is a popular appetiser with a pleasant bite.

Ingredients
- Dried wood ear mushrooms40 g
- Rice vinegar2 tbsp
- Garlic3 cloves
- Soy sauce & chili oil1 tbsp each
- Coriander & spring onionsome of each
- Sugar & sesame oilsome of each

Preparation
Soak the wood ears and blanch briefly.
Shock in ice water and drain.
Stir a sauce of vinegar, soy sauce, garlic and chili oil.
Toss the wood ears in the sauce.
Serve with coriander and sesame oil.
