Cold starch noodles in chili-vinegar sauce

Liangfen are translucent cold noodles of mung bean or pea starch, a refreshing summer snack from China.

The slippery-smooth strips are dressed with a savoury sauce of chili oil, black vinegar and garlic.

Ingredients

  • Mung bean starch100 g
  • Water600 ml
  • Chili oil2 tbsp
  • Black vinegar & soy sauce1 tbsp each
  • Garlic2 cloves
  • Sesame & coriandersome of each

Preparation

  1. Mix the starch with water and boil while stirring.

  2. Pour the mixture into a mould and let it set.

  3. Cut the set block into strips.

  4. Mix chili oil, vinegar, soy sauce and garlic into a sauce.

  5. Dress the noodles with the sauce and serve cold.
