Liangfen
Cold starch noodles in chili-vinegar sauce
Liangfen are translucent cold noodles of mung bean or pea starch, a refreshing summer snack from China.
The slippery-smooth strips are dressed with a savoury sauce of chili oil, black vinegar and garlic.

Ingredients
- Mung bean starch100 g
- Water600 ml
- Chili oil2 tbsp
- Black vinegar & soy sauce1 tbsp each
- Garlic2 cloves
- Sesame & coriandersome of each

Preparation
Mix the starch with water and boil while stirring.
Pour the mixture into a mould and let it set.
Cut the set block into strips.
Mix chili oil, vinegar, soy sauce and garlic into a sauce.
Dress the noodles with the sauce and serve cold.
