Stuffed dough balls with mashed vegetables from Bihar

Litti chokha is a rustic dish from Bihar: wheat dough balls filled with roasted chickpea flour (sattu).

Baked over embers, they are drizzled with ghee and served with chokha, a spiced mash of roasted vegetables.

Ingredients

  • Wheat flour300 g
  • Sattu (roasted chickpea flour)150 g
  • Eggplant & potatosome of each
  • Tomato2 pieces
  • Ginger, garlic & chilisome of each
  • Ghee & mustard oilsome of each

Preparation

  1. Mix sattu with spices, ginger and mustard oil into a filling.

  2. Form dough balls, fill and seal them.

  3. Bake over embers or in the oven until done.

  4. Roast and mash eggplant, potato and tomato (chokha).

  5. Drizzle the litti with ghee and serve with chokha.
