Longganisa
Filipino breakfast sausages
Longganisa are small Filipino pork sausages that, depending on the region, can be sweet or garlicky-sour.
For breakfast they are served with garlic rice and a fried egg as longsilog.

- Minced pork600 g
- Garlic6 cloves
- Brown sugar3 tbsp
- Vinegar2 tbsp
- Paprika & peppersome of each
- Salt1 tsp

Preparation
Mix the pork with garlic, sugar and vinegar.
Let it rest overnight.
Form into small sausages.
Cook in a little water until it evaporates.
Fry golden in their own fat.
