Longganisa

Filipino breakfast sausages

Longganisa are small Filipino pork sausages that, depending on the region, can be sweet or garlicky-sour.

For breakfast they are served with garlic rice and a fried egg as longsilog.

Ingredients

  • Minced pork600 g
  • Garlic6 cloves
  • Brown sugar3 tbsp
  • Vinegar2 tbsp
  • Paprika & peppersome of each
  • Salt1 tsp

Preparation

  1. Mix the pork with garlic, sugar and vinegar.

  2. Let it rest overnight.

  3. Form into small sausages.

  4. Cook in a little water until it evaporates.

  5. Fry golden in their own fat.
