Lor Mee
Noodles in thick, savoury gravy
Lor mee are thick yellow noodles in a silky, dark gravy spiced with five-spice and thickened with starch - a specialty of the Hokkien community.
Topped with pork, egg and fish cake, it is finished with garlic, chili and a splash of vinegar to taste.

- Thick yellow noodles300 g
- Pork belly250 g
- Five-spice powder1 tsp
- Dark soy sauce2 tbsp
- Cornstarch2 tbsp
- Eggs & garlicsome of each

Preparation
Braise the pork belly with five-spice and soy sauce.
Thicken the broth with starch into a thick gravy.
Cook the noodles and put into bowls.
Pour over the gravy.
Top with pork, egg and garlic, serve with vinegar.
