River snail rice noodles from Liuzhou

Luosifen is the famous, pungently fragrant rice-noodle soup from Liuzhou in Guangxi - known for its broth of river snails and fermented bamboo.

The hot-and-sour broth is poured over springy rice noodles and topped with peanuts, pickled vegetables and crisp tofu skin.

Ingredients

  • Rice noodles (thick)200 g
  • River snails (for the broth)300 g
  • Fermented bamboo (suan sun)100 g
  • Dried chilisome
  • Peanuts & pickled vegetablessome of each
  • Crisp tofu skinsome

Preparation

  1. Simmer the snails with spices into a strong broth, strain.

  2. Season the broth hot and sour, add fermented bamboo.

  3. Cook the rice noodles separately.

  4. Put noodles in the bowl, pour over the broth.

  5. Top with peanuts, vegetables and tofu skin.
